Special Feature to Support a Friend

All of us have a thousand wishes. To be thinner, to be bigger, have more money, have a cool car, a day off, a new phone, to date the person of your dreams. A cancer patient only has one wish, to kick cancer!!”

This is a special post. I would like to show support to a friend who has been battling Ovarian Cancer for over a year. She is an amazing person and a wonderful mom. It is not easy, I’m sure, but she has an amazing attitude throughout this entire battle. She just has such stunk about her, I just know that cancer doesn’t have a chance against her!! She really makes me think that if she can face this with such strength, that who am I to complain about anything.

Please read her story on  http://www.caringbridge.org/visit/beckypaluch/mystory

Tonight, I wanted to show my support and one of my best ways to show support is offer a shoulder, a kind word and cooking!
I’ve decided to make something special. Even though, she won’t get a chance to try these because she lives so far away, I know this will at least bring a smile to her face!

Support Ribbon Cookies

1/2 cup butter
1/2 cup white sugar
3 eggs
1 tsp vanilla
1 tsp lemon juice
2 1/4 cups flour
2 tsp baking powder
1/4 tsp salt

For frosting I actually used canned frosting and teal food coloring. It as the first time I ever used canned frosting, I was just very tired from work and didn’t have much time. But it still came out pretty good.

~ Preheat oven to 350 and grease a cookie pan

1. In the bowl of your electric mixer (or with a hand mixer) beat the butter and sugar until light and fluffy
2. Add the eggs, one at a time, beating well
3. Beat in the vanilla extract and lemon
4. Add flour, baking powder, and salt to butter mix, beat until combined

5. Spoon the dough onto the cookie sheet and bake for 10-12 minutes depending on the size of the cookie.

6. Completely cool the cookies before decorating!
