Mini Mushroom Cheese Frittatas

We got tired on the same old, same old for breakfast and wanted to mix it up a bit. Mainly because I am trying to re-introduce eggs into little guy’s diet. He used to love eggs, now he will kick and scream when he sees eggs, scrambled eggs mainly. He loved quiche, so I wanted to see if he will go for this one too. Totally did!!! Both my guys polished off the plate in a couple of minutes!

Ingredients:
4 eggs
1 1/2 cups mushrooms (uncooked)
1 tbs oil
1/2 cup ricotta cheese
2/3 cup mozzarella cheese
1/4 cup chopped onion
1 clove of garlic
salt, pepper to taste

Directions:
~ Preheat the oven to 375, grease an 8 count muffin pan
1. Heat up 1 tsb of oil in the small skillet
2. Saute the garlic, onion and mushrooms in the pan until almost done

3. Combine all ingredients in a mixing bowl (leave some mozzarella cheese for later). Mix well

4. Pour the egg mixture into the sections
5. Sprinkle a little more mozzarella cheese over the top

6. Bake for 15-17 minutes. Touch the center, if it is still jiggly bake a few more minutes.
