Ultimate Peaches~N~Cream

Last time I was at a farmer’s market the peaches looked so good that I just had to get a basket. It was a pretty big basket too. For about a week I have been trying to figure out what to do with those peaches. My first thought was Peach Cobbler. That thought was vetoed very fast by my hubby since he eats so much of peach cobbler at work. 
To tell you the truth, I really didn’t want to have a very filling pastry dessert anyway. I wanted something fast and light. This was the perfect dessert….although I made them so big that the little guy and I had to share it!

Ingredients:
(For 2 portions)
1 1/3 cup of plain yogurt
1/2 cup sweetened coconut flakes
1 1/3 cup of peeled and chopped fresh peaches (about 3 large peaches)
1 1/2 heavy whipping cream
2 tbs sugar

Directions:
1. Whip the heavy cream with sugar until stiff peaks appear. Put away in the fridge while preparing other parts

2. Peel and cut the peaches
3. Combine the plain yogurt with coconut, mix well pressing the coconut with the spoon on the side of the bowl (to get some flavor into the yogurt)

4. In a glass, layer the yogurt mixture, then peaches, then whipped cream.

5. Chill for about 30-40 minutes

Enjoy!
