Mild Salsa

Well, we are quite the chickens when it comes to spicy food. Mild is pretty much all we can take. I really wanted to make my own salsa for some time now, and finally got around to it. This combination was a winner in my household!


2 cups of chopped Roma tomatoes
2/3 cup chopped red onion
4 grated or minced garlic cloves
2/3 cup chopped red bell peppers
1/2 cup minced fresh cilantro
1 1/2 tbs of olive oil
1 tbs lime juice
2 tsp chili powder
salt, pepper

1. In a bowl, combine all ingredients. Mix well.

2. Cover and refrigerate overnight (at least 12 hours)
