Bake For Cure, Part I

It is that time of the year again when we show our support for the fight against breast cancer. Personally I think that support needs to be shows year-round, but this month is when everyone seems to listen and get together!
I try to do something special every year.  I can’t quite do a marathon, but I can swing a “walk”. I usually just do a tribute as well, this year I wanted to do something more, mainly because I have so many people close to me who have been affected by this monster…the “big C”. 
I will be participating in the “Bake For Cure”. The whole month of October, I will be baking some goodies and selling them at work, as well as sending some with my hubby to his work, for sale. 100% of the proceeds I will be donating to Susan G. Komen for the Cure Foundation and the end of October. 
My friend and I are doing this Bake Sale together at work. We joke that I am the baker and she is the collector. My hubby also offered to help out by taking some baked goods to work and selling it there. Today was the first day that we started to sell. By the noon we sold everything I made! We made $30 in just half a day! How exciting is that?!
Last night I made White Chocolate Raspberry Blondies. This was also the first time that I made up my own recipe for baking! In this post and some of the other posts to follow throughout October I will be posting my “Bake for Cure” recipes. 

White Chocolate Raspberry Blondies

1/2 cup butter
4 oz Baker’s white chocolate
1 cup sugar
1 tbs hot water
2 eggs
1 cup sour cream
1 cup juicy raspberries
2 tbs heavy cream
1 tsp vanilla
1 tsp baking soda
1 tsp baking powder
2 cups flour

~ Preheat the oven to 350. Grease the 9×13 baking dish
1. Melt the butter and white chocolate, mix very well until combined. Pour into a large mixing bowl

2. Add the hot water to the sugar and stir until the sugar is melted. Add the simple syrup to the bowl.

3. Add the eggs, whisk well.

4. Add the sour cream, heavy cream and vanilla and whisk well.

5. Add the raspberries and mix.

6. Stir flour, baking soda and baking powder together. Add to the liquids and mix until combined. Make sure to break up all the clumps if any form.

7. Pour the batter into the greased baking dish. Make sure it spreads evenly
8. Bake for 35-40 minutes. Cook before serving.
