Frozen Favorites, Taking a Break With Lean Cuisine and Secret Dressing, #FrozenFavorites

This may sound unbelievable but I actually have days when I just do not feel like cooking. Having a husband who is a restaurant manager, leaves me with a crazy schedule. He doesn’t have a steady schedule, so his days off change and he works mornings or evening.

When he is not home and the little guys is all set on lunch or dinner, I don’t always cook for myself. Even though I absolutely love cooking, I need a break sometimes. I always have a salad, a sandwich or a Lean Cuisine. Its just so fast and easy to pop it in a microwave and chop up a salad with it. It’s also a lunch under 600 calories. Win-win!

I have a little secret weapon for my fast lunches. I was getting ready for work one morning and realized that I didn’t have leftovers from dinner to take to lunch with me. So I grabbed a Lean Cuisine and chopped up a quick salad. I didn’t have any dressing in the fridge so I made my own really fast. That dressing was so good that now, I don’t even bother with a store bought dressing.

It is so easy, fast and flavorful, you’ll fall in love if you try it! All you need is a clove of garlic, some minced cilantro, 1 tsp of lemon juice, 1 1/2 tbs grape seed oil, 3-4 drops of balsamic vinegar and some salt and pepper. Grate the garlic into a small cup and add the remaining ingredients. Mix very well and its ready!

I also used to pick up Lean Cuisine meals when they were on sale, just to keep in the freezer. I’ve actually been buying them since I was in college and just didn’t have time to cook between the classes. I don’t have to tell you about the financial struggles of a college students.

While I was at Sam’s the other day, I noticed that they had 6-packs of Asian flavored Lean Cuisine meals for just $11.25 which is less than $2 a meal. If I add a small salad or some fresh veggies, it still works out to less than $4. The cheapest lunch that I ever found was $5 at this little “mom-n-pop” restaurant that was next to my work.
