Easy Cannoli Cups and Family Night with Stouffer’s, Nestle and Ice Age 4, #time4family

Only one more week until Christmas, can you believe it? I am so excited! I still look like the kid on Christmas morning, running to the tree and opening presents. I also love watching people open my presents as much as I love opening them. The Christmas tree is still my favorite part of the holidays though. Somehow, it put me in a holiday mood every time I look at it. Lighting the tree makes me feel so cozy and warm. I love curling up with some hot cocoa and a movie in front of my tree. So cozy!
Family night in front of the Christmas tree is even better! Since we’ve been crazy busy for a couple of weeks and hubby’s work is insane during the holidays, I planned a little family night for us. No phones…no computers…just the three of us. I also decided to make it an easy night on myself, and get us Stouffer’s Lasagna for dinner and made an easy dessert. Everyone needs a kitchen break once in a while and Stouffer’s makes it easy and delicious!
While shopping for dinner, I got us the lasagna and I found New York Texas Toast that hubby would love. There was also a coupon on the box of toast (and lasagna) for a free stand-up bag of Nestle candy. Sweet!
Speaking of sweet…I made a “jaw-dropping”, “make-you-swallow-your-tongue”, EASY Cannoli Cups as a dessert for our family night. Best part it, it only took me 15 minutes!

Ingredients:
(Makes 6)
1/4 package of Fillo dough
Pam Butter Spray
1/2 cup of heavy cream
2 tbs sugar
1/2 cup ricotta
1 tsp fresh grated orange zest
1 tsp vanilla
1 tbs sugar

About 2 tbs mini chocolate morsels

Directions:

1. Preheat the oven to 350 and lightly grease a muffin pan.
2. Unroll the Fillo dough (keep it stacked) and cut off a quarter of it. Cut it in half. Stack the two squares of Fillo sheets together. Using the butter spray, spray in between every 2-3 sheets. Grab 5-6 sheets at a time and carefully press them into the muffin cups, forming a cup out of the dough sheets. Bake the cups for about 8  minutes, until golden brown. Make sure to cool the cups completely before filling with cannoli cream.
3. While the cups are baking, make the cannoli cream. Beat the heavy cream and 2 tbs of sugar in a bowl with an electric mixer, until soft peaks appear. In a separate bowl, beat ricotta, sugar, vanilla and orange zest for a couple of minutes. Slowly, fold the ricotta mixture into the whipped heavy cream until all incorporated.
4. Scoop the cannoli cream into the cooled cups and sprinkle with mini chocolate chips.

Dinner and a movie time!
 So with that easy dinner and dessert, we had a wonderful family night. I got us the new Ice Age 4 to watch too. Confession… hubby and I like cartoon movies. We used to go to the movie theater to watch animated movies all the time, before the little man was born. Yeap, we were those people without kids in the theater that you see and think “why are they watching animated movie without a kid?” We like them, they are fun! So we enjoy watching those movies at home with the little guy too. I think we even saw the first Ice Age in the theater.
I really liked this movie, even though it is number 4. You know what they say sometimes, movies get worse with each sequel. I actually thought this one was one of the better ones. Honestly, I was not a fan of the second one. Ice Age, Dawn of Dinosaurs would be my favorite and little man’s favorite out of the four.
