Snowflake Pancakes

Hubby: “Why are you making snowflake pancakes? Isn’t it a little late?”
Me: “It’s January honey, just because it’s almost 70 here, remember that most of the country is still chilly!”
Sometimes we do forget that it is winter time. We are still waiting on the winter to come here, it hasn’t gotten below 60. Actually, for the past three years, winter has been MIA in Florida. Too bad because I do miss winter. For this reason, I like to make winter themed treats once in a while. I made these fun and easy snowflake pancakes for the boys.

Ingredients:
2 eggs
1 cup of buttermilk
2 tbs vegetable oil
3 tsp sugar
1 tsp vanilla
1/4 tsp baking soda
1 1/2 tsp baking powder
1 cup of flour
1/4 tsp salt

1 tbs cocoa powder

Directions:

1. Preheat a greased pan on medium heat.
2. Combine all ingredients, except cocoa powder, in a medium bowl and mix until all combined. Let sit for about 5 minutes.
3. Separate one third of the batter into another bowl and mix it with cocoa powder.
4.  Cook the pancakes until done. Using a cookie cutter, cut out snowflakes. Insert the chocolate snowflake into the cut out of the plain pancake. Butter and dust with powder sugar.
