Tasty, refreshing and light cucumber salad. This wonderful warm weather salad is made with thinly sliced cucumbers, bell peppers, kale, fresh herbs and sesame flavors.
Are you ready for spring?
I swear, I just heard my friends in northern states scream “yes!” Much like I’m feeling the looks of my friends here, in FL, as they’re thinking, “spring’s been here and it’s almost summer.”
Yes, warm weather is already here for us in the southern states. In fact, this has been one mild “winter” this year. (“Winter” is always in quotes when talked about in FL.) I just call it “those three months where I need a sweater or a light jacket.”
But whether your temperatures are crawling up or still a bit low, this cucumber salad is no less refreshing and delicious.
In no time at all, we will all be enjoying sunshine and cool breeze. You will definitely need to make this salad to go with your dinner or as a light snack.
I actually enjoy this salad as a snack more often than a side dish. It’s healthy and very satisfying. But if you do plan on making it along with some meat, I suggest you pair it with my Parmesan and Herb Stuffed Chicken. It will also go very nicely with Chili Lime Roasted Chicken or Asiago Spinach & Mushroom Chicken Rollatini. For steak loves, this will be great with a nice seared sirloin topped with some herb butter.
Sesame Cucumber Salad
Ingredients
- 1 large English cucumber
- 1 yellow bell pepper
- 2 large kale leaves stem removed
- 2 Tbsp minced fresh cilantro
- 1/4 cup diced scallions
- 1 garlic clove pressed
- 2 Tbsp olive oil
- 2 tsp sesame oil
- 2 tsp rice vinegar
- 1 Tbsp sesame seeds
- Salt
Instructions
- Peel cucumber and seed bell pepper. Slice both thin. You can use a mandolin if you have one. Add sliced cucumber and pepper to a large mixing bowl.
- Dice kale and add it to the bowl as well.
- Add diced scallions, minced cilantro and pressed garlic. Gently mix veggies until evenly mixed.
- Add oils, vinegar, sesame seeds and salt. Gently mix until all veggies are evenly coated.
- Serve right away or refrigerate.
