Frozen treats are a must to help tolerate the hot days of summer. These delicious and refreshing mojito popsicles are made with sweet, juicy honeydew melon, fresh lime juice, and mint. These pops can easily be turned into a boozy treat for adults just just adding some light rum.

Oh…my…hot, hot, summer days! The official first day of summer was only a couple of days ago and already, we’re feeling the heat index shoot up.
I have a theory, I think Florida is actually closer to the sun than the rest of the Earth. The sun is so brutal in Florida, so I think my theory is correct. Being outside for longer than a walk to the car is impossible. Only lizards are enjoying these sunny days. I want clouds, lots and lots of clouds.
To survive the summer heat, my freezer needs to be packed with different iced treats. Right now, I have four or five varieties of the popsicles in the freezer because we eat so many of them throughout the day. My guys actually prefer to have fruity popsicles over ice cream and that makes me happy. Loading them with fruit is much better than sugary ice cream.
Speaking of sugary ice cream and a better fruity popsicle option, honeydew is one of the best fruit option to make popsicles. Honeydew and watermelon tend to be naturally sweet so there is less need for adding sugar. Taste your honeydew first to see if you even need to add sugar. My honeydew melon was quite sweet and juicy, so all I needed was 2 tablespoons of sugar.
To cocktail or not to cocktail:
You get the summer party started, you can make these honeydew pops into mojito popsicles. All you have to do is add 4 oz of light rum to the popsicle mixture and you will have a frozen cocktail pop!
Honeydew Mojito Popsicles
- 3/4 small honeydew melon
- 1/3 cup fresh mint leaves
- Juice from 1 lg lime
- 2-4 Tbsp sugar depending on how sweet the melon is
- Optional: 4 oz light rum
Cut the honeydew melon in half. Scoop out the seeds and cut off the rind. Chop honeydew and add it to the blender. Taste some melon to see how much sugar you would need.
Squeeze lime juice into the blender and add mint.
Add 2-4 Tbsp of sugar and blend everything until all smooth. (*Optional: add rum if you making boozy popsicles.)
Divide honeydew mixture among popsicle mold cups. Freeze popsicles for at least 8 hours.
*If your mold doesn't have tops, use wooden popsicle sticks: cover the mold tightly with saran wrap and quickly poke wooden sticks through the center of each mold. Saran wrap will keep the sticks standing up while the popsicles freeze.
If you don't want to use saran wrap, you can set the timer for 1 hour and place ice pops molds in the freezer. After an hour, slide popsicle sticks into the center of each mold and then let it freeze for another 7 hours.*
*Remember, taking pops straight from the freezer can be quite hard. You will want to either run each mold under warm water (not over the top) or dip it in warm water for a few seconds so they can slide out easily.
