Tasty turkey grilled cheese made with pumpkin puree, sharp white cheddar cheese, and dried herbs. It’s a perfectly delicious way to use up some leftover turkey.
What do you usually have leftover after a Thanksgiving Dinner? Do you have your favorite thing to make using Thanksgiving leftover?
We usually have the most turkey and cranberry sauce leftover after the holiday dinner. Turkey seems to be so big every year and when you add all the sides, bread, and dessert, noone seems to make a sizable dent in the turkey. We usually just end up eating one side and then there is HALF of turkey left. That’s why I love making hot sandwiches the next day.
I tend to make either turkey sliders or turkey grilled cheese sandwiches loaded with thinly sliced leftover turkey and different gooey cheeses. I usually go for sharper, more flavorful cheeses like Asiago, sharp white cheddar. They go great with turkey. I also like to add a touch of sweetness to the sandwich by adding some cranberry sauce.
This year, I’m doing something different and doing an all-savory ingredients. I added some pumpkin to turkey and some dried thyme and sage. Herbs really bring out the brine and seasoning in turkey. Sharp white cheddar cheese works great here to bring in more flavor and complement the mild turkey and pumpkin. This is one of the best ways to use up the turkey and definitely on par with our favorite Turkey Cranberry and Brie Grilled Cheese.

Pumpkin Turkey Grilled Cheese
- 2 slices of sourdough bread
- About 1 cup of turkey meat cooked and warmed
- 4 oz sharp white cheddar cheese sliced
- 2-3 Tbsp pumpkin puree
- 1/2 tsp dry thyme
- 1/2 tsp dry sage
- Olive oil for cooking
Preheat a medium cooking pan over medium heat.
Brush one side of each slice of bread with olive oil.
Spread pumpkin puree on one side of each slice of bread (not the oiled side).
Place bread slices in the heated pan, oil side down.
Divide cheese slices among the two slices of bread.
Sprinkle dried thyme, sage and some salt over both slices of bread. Spread turkey on one slice of bread. Once the cheese starts to melt, press the two slices of bread together.
Cook until golden on both sides.
Serve right away.
