6. Cut the pastry in four even circles. Place the fourth of the spinach/cheese mixture in the center of the circle. Wet your fingers with water and rub the edges of the pastry circle. Punch the edges together.
7. Place the empanadas on a baking sheet. Brush the empanadas with egg. Bake for 15-17 minutes, until they are golden brown.
