Garlic Pork Roast with Roasted Broccoli and Feta

Ingredients for Pork:

Pork loin roast
2 cloves of garlic
2 tbs olive oil
1 tsp basil
1 tsp parsley
salt, pepper

Ingredients for Broccoli:

2 cups broccoli florets
1 cup sliced bell peppers
2 tbs olive oil
Salt, pepper, cilantro
1/2 cup feta cheese

Directions:
~Preheat the oven to 375.
1. In a small bowl, combine the oil, basil, parsley, salt and pepper. Grate in one garlic clove. Mix very well, set aside.
2. Slice the other garlic clove length-wise. Rinse the pork loin, lay onto the cutting board. Stab the pork in several places all the way through. Place the garlic slices into the holes.

3. Rub the pork loin all over with the seasoning and oil mixture.

4. Place onto the roasting pan, place in the oven.

5. Bake for about 1 hour and 15 minutes depending on the size of the roast.

6. While the pork is ready, (actually about 25 minutes before its ready), since the peppers and broccoli. and place it into the mixing bowl.

7. Add the oil and the seasoning. Mix well. Place onto the baking sheet.

8. Bake for about 15 minutes.
9. Add the feta cheese while the veggies are still hot. Serve warm!
