This easy mac and cheese side dish is made with extra cheesy macaroni and cheese and loaded with vegetables. This is a perfect side dish for the entire family.
What happened to my kiddo who used to eat everything? I wonder that every single day. He seems to get pickier every year. My little man used to eat or at least try everything I gave him that we adults were eating. Now it’s hard to even get him to eat things that used to be his favorites. Fried rice…won’t even touch. French Toast…takes a bite and pushes away. Most meat…forget about it!
I still have one thing going for me though and that’s veggies. He still likes his veggies. I can make him a vegetable soup loaded with different veggies and he’s a happy camper.
It’s actually been quite exciting when we can get him to try and like new foods. For the longest time he would not touch pizza. After talking him into trying it one day, he liked it and gladly eats it now. Same thing happened when I talked him into trying Mac and Cheese Pizza Cups that I made with KRAFT Macaroni and Cheese, he liked it! It is now another dish I can make for him, which is great because I can actually make macaroni and cheese in many different flavors.
For our last mac and cheese night, I made everyone their own macaroni and cheese cups and loaded them with veggies. It made a great side dish to the oven baked ham but would also work well with any meat.
Mac and cheese is now another family dinner dish that I make for those few nights a month that we get to have dinner together. Since my husband’s work hours are always different, we try to have dinner together when we can. I don’t feel like spending too much time in the kitchen on those days, so I go for easy dinners with help from KRAFT Macaroni & Cheese Dinner.
Kraft Macaroni & Cheese Dinner has 9g of protein per serving and is a good source of calcium (10% DV) per serving* (See nutrition information for sodium content.) When using this mac and cheese dinner, I normally omit butter completely, use skim milk and added shredded cheddar cheese for extra cheesiness. I’m also excited to find out that KRAFT will be moving to no artificial preservatives and no synthetic colors in 2016.
Individual Veggie Loaded Mac and Cheese Cups
- 7.25 oz box of KRAFT Macaroni & Cheese Dinner
- 4 Tbsp non-fat milk
- 1/2 cup shredded sharp cheddar cheese
- 1 bunch of broccoli
- 2 medium carrots
- 1 shallot
- 1 medium tomato
- Fresh cracked pepper
- 4 Tbsp Mozzarella cheese
- Preheat the oven to 350 and grease 4 8-oz ramekins.
- Cook macaroni al dente, drain and transfer back into the pot. Mix with cheese packets that was in the box, milk and shredded cheddar cheese. Stir well, until pasta is coated in cheese and smooth.
- Dice broccoli florets, carrots, shallot and tomato.
- In a separate cooking pan, over medium heat, saute veggies with some salt and pepper until cooked.
- Add cooked veggies to the pasta and stir until evenly incorporated.
- Divide pasta mixture among prepared ramekins and top off with a tablespoon of cheese. You can place ramekins on a baking sheet to make it easier.
- Bake for 15 minutes.
