Well, the blog settings have failed me again! The scheduled post never got posted. Also, while I was away at a lake-house, celebrating New Year’s, I found myself with no internet access! When we got there, there was a note on a wall that said “dial-up”…seriously? I don’t even think any laptops are compatible with dial-up anymore! I went through some withdrawals but I had that little hope that my last post was posted…but nooooo…that didn’t work either. GRRR!
Anyway, this is the last cocktail in what was supposed to be my New Year’s cocktail countdown. This was my favorite cocktail in the series, what was your favorite? (You can see 1, 2, 3 and 4 by clicking on the number.)
Today, I watched New Year’s Eve movie for the first time. I can’t believe I haven’t watched it last year because it is an awesome movie! It’s a great, “feel good” movie for the holidays, I loved it! I wanted to share this clip with you and wish you all a Happy New Year!
Pomegranate Mojito Champagne Cocktail
Ingredients:
(For 2 cocktails)
2 tbs pomegranate seeds
1 tsp sugar
2 tsp water
3 oz light rum
4 oz pomegranate juice
Champagne (enough to fill the glass)
Extra pomegranate seeds if you like
Directions:
1. Place the 2 tbs of pomegranate seeds in a cup and add sugar and water. Heat it up in a microwave for about 15 seconds. When you take it out, it should be hot. Mash the pomegranate seeds and sugar water a little, to break some of the seeds.
2. Combine the pomegranate juice and rum in the glasses. Split the pomegranate/sugar mixture between the glasses as well. Add some extra seeds if you would like. (I love drunk pomegranate seeds.)
3. Fill the glasses with champagne to the top.
