Who loves French Toast? Better question is who doesn’t? This Blueberry and Cream Stuffed French Toast is one of our favorites!
Ingredients:
4 oz cream cheese
1 tbs milk
1/4 cup of powder sugar
1/4 cup of blueberries
1/2 tsp vanilla extract
4 1 inch slices of Italian bread
2 eggs
1 tbs milk
1/2 tsp vanilla
Directions:
1. Beat the cream cheese, 1 tbs milk, powder sugar, 1/2 tsp vanilla and blueberries with an electric mixer until smooth.
2. Beat the egg, 1 tbs milk and 1/2 tsp vanilla.
3. Cut the bread lengthwise almost all the way (make sure not to cut all the way)
4. Spread a quarter of the cream cheese mixture into the bread.
5. Dip both sides of bread into the egg mixture
6. Cook for 3-4 minutes of each side.
7. Top off with blueberries and powder sugar.

I can’t remember which linky party I found this on, but I bookmarked it and made a very similar version with strawberries!
Here is the post about it:

Mmmmm! This reminds me of my favorite stuffed french toast – Tonga Toast in WDW. Huge slice, stuffed with banana, battered and fried then rolled in cinnamon/sugar. To. Die. For.
Glad I found you at Kristy’s place – great stuff! 🙂
