Brush one side of each slice of bread with olive oil.
Spread pumpkin puree on one side of each slice of bread (not the oiled side).
Place bread slices in the heated pan, oil side down.
Divide cheese slices among the two slices of bread.
Sprinkle dried thyme, sage and some salt over both slices of bread. Spread turkey on one slice of bread. Once the cheese starts to melt, press the two slices of bread together.
