Mini Strawberry Oat Muffins

These Mini Strawberry Oat Muffins are not only delicious but they are also filling and easy to make.

  • 2 eggs room temperature
  • 2/3 cups of sugar little more if you like them sweeter
  • 1/4 cup of vegetable oil
  • 3/4 cup of buttermilk
  • 1 tsp vanilla
  • 2 cups of oats
  • 1 cup flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 6-7 medium strawberries finely chopped


  1. Preheat the oven to 350 and lightly grease a mini muffin pan.
  2. In a large mixing bowl, whisk together eggs, sugar, buttermilk, oil and vanilla. Whisk until combined.
  3. Sift in the flour, baking powder, baking soda and salt. Whisk until incorporated.
  4. Using a wooden spoon or a rubber spatula, mix in oats until all evenly incorporated.
  5. Fold in the strawberries.
  6. Divide the batter between the muffin cups, filling it 3/4 of the way.
  7. Bake for 14-18 minutes, until the toothpick inserted in the center comes out clean.
