Jalapeno Cheddar Egg Salad

  • 12 hard boiled eggs
  • 3 jalapeno peppers seeded
  • 1 1/4 cup shredded sharp cheddar cheese
  • salt
  • 2 tbsp sour cream
  • 1/3 cup mayo (1/2 cup if you like it creamier)


  • 1/2 tsp chipotle chili powder


  • Peel and dice hard boiled eggs. Add them to a large mixing bowl.
  • Seed and dice jalapenos and add them to the bowl with eggs.
  • Add cheddar cheese and salt. Gently mix until everything is evenly incorporated. 
    (If you want to add a little more spice to the egg salad, add some chipotle chili powder.)
  • Add mayo and sour cream. Gently mix until all evenly combined. 
  • Store in the refrigerator in an air-tight container.
