Peel and dice hard boiled eggs. Add them to a large mixing bowl.
Seed and dice jalapenos and add them to the bowl with eggs.
Add cheddar cheese and salt. Gently mix until everything is evenly incorporated. (If you want to add a little more spice to the egg salad, add some chipotle chili powder.)
Add mayo and sour cream. Gently mix until all evenly combined.
Store in the refrigerator in an air-tight container.
