20oztortellinithree cheese flavor or other flavor of your choice
2Tbspolive oil
1small yellow onion
3garlic cloves
1 1/4cupsheavy whipping cream
2/3cuppumpkin puree
1 1/4cupsshredded cheese mixMozzarella, Parmesan, Romano, or another mix you prefer
1tspdry jalapeno peppers
1/2tspcrushed red pepper flakesmore if you want more spice

Instructions
Cook tortellini according to the package instructions until just done. Drain off water and set aside.
Preheat the oven to 350 and lightly grease an 8x8 baking dish.
In a sauce pot, heat up oil over medium heat.
Slice onions thinly and add it to the sauce pot. Saute until softened.
Smash and mince garlic and add it to the onions. Saute for a couple of minutes.
Slowly pour in heavy whipping cream as you stir. Heat through and stir in pumpkin, dry jalapenos, crushed red pepper flakes, and salt. Stir well, until smooth.
Cook (don't boil) for a few minutes and stir in cheese. Keep stirring until cheese is melted and smoothly incorporated. Take off heat.
Gently fold sauce with tortellini until evenly coated. Transfer into the prepared baking dish and top off with some more cheese.
