Cappuccino Cookies (Soft Cookies)
**NOTE: If you can't find the cappuccino flavored chips at the store, I noticed that you can order them straight from King Arthur Flour website. I also checked Amazon and it is available there as well.

Ingredients

pure vanilla extract

baking soda

cappuccino baking chips

instant espresso + 1 tsp warm water
Instructions
Preheat the oven to 375 degrees and line a baking sheet with lightly greased parchment paper.
Stir instant espresso and water, set aside.
Beat butter in an electric mixer on medium-high speed, for a couple of minutes.
Scrape sides and bottom of the bowl, add sugars and beat for a couple more minutes.
Scrape sides and bottom of the bowl again and beat in eggs on medium speed, one at a time. Add vanilla and espresso.
Lower speed to low and add flour, baking soda, and vanilla. Beat until just combines.
Add cappuccino chip and fold until evenly incorporated.
Scoop cookie dough with a cookie scoop and place them on the prepared baking sheet, about 2 inches apart.
Bake for 9-11 minutes.
Cool on a wire rack.
