These Strawberry Mojito Pops are very easy, tasty and will keep you cool after hot summer activities. They are made with fresh strawberries, fresh mint, lime, and they are non-alcoholic

Combine strawberries, mint and lime zest in your blender and pulse until all smooth.
Mix sugar and hot water until sugar is melted. Add it to the strawberry mixture and mix well. (Taste to see it that's enough sweetness for you)
Divide mixture among popsicle molds.
*If your mold doesn't have tops, use wooden popsicle sticks: cover the mold tightly with saran wrap and quickly poke wooden sticks through the center of each mold. Saran wrap will keep the sticks standing up while the popsicles freeze. Or, freeze for 30 minutes and then add popsicles sticks.
Popsicles will need at least 4 hours to fully freeze.
