This apple treat is super easy and can be even faster if the apple pie filling is prepare ahead of time. Serve these apple blondies with some ice cream and caramel sauce on top as a delightful fall dessert.
Heat up a sauce pot over medium heat. Add butter and sugar, mix well. Add diced apples and apple pie spice. Mix well, cover and cook until apples are softened.
Take off the lid and stir in flour. The mixture will thicken. Mix and cook for about a minute. Take off heat. Cool for at least 15 minutes.
Blondies:
Preheat the oven to 350 and line an 8x8 baking dish with parchment paper.
Combine sugar and melted butter in a large mixing bowl and whisk well.
Add egg and whisk vigorously for a couple of minutes. (Great workout!)
Whisk in vanilla, baking powder, apple pie spice, and flour until completely combined.
Whisk in apple pie filling and transfer the batter into the prepared baking dish. Gently spread the batter and make sure it's spread evenly through the pan.
Bake for 22-26 minutes. Let the blondies cool down to room temerature before cutting.
Notes
Tips to remember:
Don’t use the filling as a topping. Do note that apple pie filling is different from topping because it’s much thicker and contains flour. It won’t be good as a topping since it’s meant for mixing into the batter.
Don’t over-mix the batter. This is not a cake batter, make sure you don’t use a blender or a mixer but a whisk and a spatula to mix it. Most whisking will be done with the eggs and then, only mix to combine.
Make sure apple filling is cooled. Before folding the apple filling into the batter, make sure it’s cooled to about room temperature!
Spread the batter evenly in the baking pan. You can grease your hands and help spread the batter evenly all throughout the baking dish. If it’s not spread evenly, the blondies won’t bake evenly throughout.
Storing: You can store the blondies in the same pan you baked them in or transfer them into a food storage container. I recommend keeping the parchment paper if you transfer the blondies into another container. Make sure to store it covered airtight and refrigerate. In the refrigerator, it will keep for 3-4 days. You can always warm up individual slices in a microwave for a few seconds.
