Preheat the oven to 400° and line a rimmed baking sheet with aluminum foil, covering it entirely and up the sides.
Place a wire rack into the baking sheet and lightly spray it with cooking spray.
Lay out bacon strips on the wire rack, side by side, in one even layer. Cook bacon for 15-25 minutes, depending on thickness of bacon. (Keep the oven light on and check in on it from time to time.)
Scrambled Eggs:
Preheat a large cooking pan over medium heat and grease it with some oil all over the bottom and up the sides.
Whisk eggs, milk, salt, pepper, and chili powder in a bowl until smooth.
Pour the eggs into the pan and let it sit for 45-60 seconds. It will start cooking on the bottom. Start slowly stirring with a spatula, evenly scraping the bottom and the sides, and folding the eggs over each other. Continue to slowly stir and fold until the eggs are just cooked. (About medium softness but not hard.)
Take the eggs out of the pan as soon as it’s done so it doesn’t continue cooking in the hot pan.
Breakfast Tacos:
Preheat oven to 375° and lightly grease 9×13 baking pan. Place 8 taco tortillas into the pan, side by side, folded and leaning on each other.
Spread some shredded Monterrey jack cheese over the bottom of each tortilla.
Divide scrambled eggs among the tortillas evenly.
Crumble bacon strips and add about 2 bacon strips her tortilla.
Sprinkle some more cheese over each taco and bake for about 10 minutes.
