Sesame Cucumber Salad
This wonderful warm weather salad is made with thinly sliced cucumbers, bell peppers, kale, fresh herbs and sesame flavors.

Ingredients

large English cucumber
1
yellow bell pepper
2
large kale leaves
stem removed

Tbsp
minced fresh cilantro

diced scallions

garlic clove
pressed

olive oil

tsp
sesame oil
2
tsp
rice vinegar
1
Tbsp
sesame seeds

Instructions
Peel cucumber and seed bell pepper. Slice both thin. You can use a mandolin if you have one. Add sliced cucumber and pepper to a large mixing bowl.
Dice kale and add it to the bowl as well.
Add diced scallions, minced cilantro and pressed garlic. Gently mix veggies until evenly mixed.
Add oils, vinegar, sesame seeds and salt. Gently mix until all veggies are evenly coated.
Serve right away or refrigerate.
