Espresso Rubbed Filet Mignon and Loaded Sweet Potato Wedges

Instructions

  1. For the steak:
  2. Rub steak filets with some espresso salt and set aside while preheating the skillet.
  3. Preheat a skillet over medium heat, with a little bit of oil in it, until completely hot.
  4. Cook the steaks over medium heat until desired temperature is reached.
  5. Tips for an easy way to check the steak without a thermometer:
  6. Look at your palm…now touch (don't press) your pointer finger to your thumb(don't flex the muscles). Feel the flesh area below the thumb with your other pointer finger. This is Medium Rare!
  7. Now, touch the middle finger to the thumb(again, don't press the fingers together, just touch). Feel the flesh area below the thumb with your other pointer finger. This is Medium!
  8. Now, touch the ring finger to the thumb. Feel the flesh area below the thumb with your other pointer finger. This is Medium Well!
  9. Now, touch the pinky to the thumb. Feel the flesh area below the thumb with your other pointer finger.This is Well Done!
