Light Caesar Dressing Recipe {No Egg}

This Light homemade Caesar Dressing is made with non-fat Greek yogurt and has no raw eggs in it.

Ingredients

  • 2 large garlic cloves
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 Tbsp white vinegar
  • 1/4 cup non-fat Greek yogurt
  • 1/2 cup extra virgin olive oil + 2 Tbsp
  • 1 tsp lemon juice
  • 1 tsp anchovy paste or 1 anchovy fillet
  • 1/3 cup Parmesan cheese
  • Fresh cracked pepper
  • Salt optional

Instructions

  1. Combine all ingredients (except salt) in a blender and pulse several times, until all well blended and smooth.
  2. Taste before deciding to all salt as anchovy paste is pretty salty.
  3. Refrigerate until ready to use.
