July 4th Coconut Berry Popsicles

These pops are made with coconut water, strawberries and blueberries.

Ingredients

  • 17 oz container of coconut water
  • 2 tbs of sugar + 1 tbs hot water to make simple syrup
  • 1/2 cup blueberries
  • 1/2 cup finely chopped strawberries

Instructions

  1. In a medium mixing bowl, combine coconut water and simple syrup. Mix until well combined.
  2. Separate the berries between the popsicle molds.
  3. Slowly fill the molds with coconut water about 3/4 of the way, so that it doesn't overflow when you add the sticks.
  4. Freeze for at least 5 hours.
