Pumpkin Spice Rum Balls Recipe

I love bringing a batch of these pumpkin spice rum balls to a fall get-together with friends, since they come together in about 20 minutes and never touch the oven. For the flavor, I add pumpkin pie spice and a splash of Rumchata for a warm, creamy edge, and every single time, someone asks if there's real pumpkin inside(there isn't, it's all spice). If you want a boozy, no-bake treat that tastes like pumpkin pie in cookie form, this is the one to make.

Ingredients

11 oz Nilla wafers makes 3 cups crushed
1/4 cup Rumchata
2 Tbsp rum
3 Tbsp honey
1/3 cup powdered sugar
2 tsp pumpkin pie spice
1/2 cup powder sugar for rolling + 1/2 tsp pumpkin pie spice sifted together

Instructions

Pulse Nilla wafers in a blender until all crumbled.
In a large mixing bowl, mix powder sugar, pumpkin pie spice, wafer crumbs, honey, rum and Rumchata until completely mixed and looks like cookie dough.
Roll cookie dough into 1-inch balls.
Roll each cookie in powder sugar mixture.
Store in the refrigerator.
