Blueberry Lemon Popsicles

Yes, I have more popsicles for you! It seems to be a hot summer for everyone and berry/fruit popsicles are just the perfect way to keep cool and refresh. It’s also a perfect sweet treat since it’s all berries with a little bit of honey. These popsicles are made with blueberries, some honey and fresh lemon.

Just like the big box of peaches that I have sitting on the kitchen counter, I grabbed a big box of blueberries while I was at the store. They just put them out so strategically and make them look so good at the store that I always fall for it. I’m like a fly that gets drawn to the fruit. I bring it home and stare at it for a while, thinking what am I going to do with all that fruit and berried before they go bad.

Popsicles seemed like a good way to go. These popsicles are so delicious and refreshing! I also love the fact that they are healthy. Did I mention how easy they are to make?

All you need is some blueberries…ok, a lot of blueberries! You also need a lemon and some honey. (Haha, in my head is sounded more like “hoow-neey!” I really don’t know why.)

 *Little tip for getting more juice from a lemon: warm it up a little, may be 5-7 second in the microwave, and roll it with your hand on the counter back and forward a couple of times. More juice!!

Blueberry Lemon Popsicles

These popsicles are made with blueberries, some honey and fresh lemon.

Ingredients

  • 24 oz of fresh blueberries
  • 1/2 cup of honey
  • Juice from 1 lemon

Instructions

  • Combine all the ingredients in a food processor. Puree well.
  • Split the puree among the popsicle molds.
  • Cover the molds with saran wrap, tight. Poke very small holes right in the center and carefully stick some wooden popsicle sticks in the puree.
  • Freeze for 5-6 hours.

    Thanks for linking up last week to Sugar & Slice Sunday. You’ve been featured on tonights link party – hurrah!

    I’m so going to have to bookmark and try out this recipe. I can’t even put into words just how delicious these look. My kids get through a massive amount of ice lollies (popsicles) so I’ll be at the shops shortly buying those blueberries and lemons and re-creating your recipe. Keep an eye out on my blog for it. And of course well deserved credit will be given too.

    I just made these. They are delicious and refreshing! I’m in the desert where triple digits are the norm this time of year, so these are perfect. Thank you for the recipe. My tongue is purple.

    These are so great! My daughter *loves* them. We’ve also kept the same recipe, but used strawberries and cherries and they are both fantastic, as well!

    I am trying to make these with frozen blueberries that I picked earlier in summer. What do you suggest? Right now I have stopped letting them thaw a bit in food processor

      Hi Janice! I’m so sorry to respond late. I would recommend thawing them in the refrigerator first since it’s the safest way to thaw anything frozen. Blend thawed berries and other ingredients and then portion them in the ice pop mold. I hope it all worked out 🙂
