Refreshing, sweet and sour tropical Pineapple Lemon Martini. Beautiful balance of sweet and sour flavors in a perfect summer cocktail.

This is a story about a mean, sabotaging photo prop that killed my martini. (It is in no way a story about taking a chance, knowing perfectly that it’s a little unstable, and that chance not paying off.) So about that mean prop…

 I made this beautiful, delicious Pineapple Lemon Martini and I was so excited to take some pictures of it. It took me a while to decide on what I wanted to use as photo props but I settled on one of my favorite wood cutting boards. It has a really nice wood pattern and the colors of the wood just worked perfectly with the yellow color of the martini. It took me a bit of fiddling getting the board to stand straight because there was no wall behind it. I got it though and it stood nicely for quite a while. I ran back and forth many times, getting the rest of the props, getting the drink, and taking a bunch of pictures.

And then…while I was standing on the chair, taking some pictures from the above angle…BAM…the board comes crushing down, knocking my beautiful martini all over me and all over the patio. Oh that board, it’s all the board’s fault.

But, there was some good news. The glass didn’t break and the patio and outside furniture was super clean about 30 minutes later. But the best part was, I had enough ingredients left for another martini for me to enjoy after all that cleanup and disappointment.

This martini is totally worth having a bad day! It’s refreshing and has a beautiful flavor balance between sweet and sour. Fresh lemon and pineapple provide make a nice tropical flavor that is balanced with a little bit of simple syrup. Don’t forget the simple syrup because even though pineapple juice is a little sweet, it’s not quite enough to balance out the freshly squeezed lemon juice. You definitely need another touch of sweetness.

Pineapple Lemon Martini

Ingredients

  • 3/4 oz fresh squeezed lemon juice
  • 4 1/2 oz pineapple juice
  • 3 oz vodka
  • 1 tsp vanilla extract
  • 1/2 oz simple syrup more if you like sweeter
  • Lemon twist for garnish
  • Few ice cubes

Instructions

  • Stir 1/2 tbsp of white water and 1/2 tbsp of sugar together in the shaker until sugar is melted.
  • Add all remaining ingredients into the shaker and a few ice cubes.
  • Shake well and strain into a martini glass.
  • Rub lemon twist along the glass rim, garnish with lemon twist and enjoy!

    Oh that is too funny!! What we won’t do to get that “perfect” shot!! That reminds me of the time I had black and white foam boards all around my soup. It was looking really good through the viewfinder when I caught something out of the corner of my eye — the boards were starting to fall all onto my soup. I was lucky enough to stop the chaos. Your shots are beautiful and I’m glad you had enough leftover for you to enjoy. Hope your Sunday goes well.
