Super easy Samoas Poke Cake has all the flavor of the classic Girl Scour cookies we know and love. This poke cake is make with moist yellow cake and topped with a generous layer of coconut and caramel mixture and chocolate drizzle.

We have such a wonderful food fight today. Who doesn’t live cakes and cheesecakes? Of course everyone does!

Before we move on to the fight, I want to share this AMAZING Samoa Poke Cake. Every year, when girl scouts start selling their cookies, I have to get a few boxes of Samoas for hubby. He likes them a little too much. If left unattended, he will eat an entire box. We will be lucky if he will stop at one box.

While I was baking this cake, he was hovering over me asking if it was ready yet. Seriously, it was not cool because I have a teeny tiny kitchen. I had to lock both of them out while taking the pictures and when I opened the door they were standing there with plates! It was worth the wait though, the cake is unbelievable!

Ingredients

  • 1 box of Yellow Cake mix Plus ingredients required
  • 13.4 oz Dulce De Leche
  • 4 tbs heavy whipping cream
  • 7-8 oz sweetened coconut flakes
  • 3-4 tbs hot fudge

Instructions

  • Preheat the oven to 350 and grease an 11x9 cake pan
  • Mix and bake the cake according to directions.
  • Once the cake is cooked, cool it for about 10 minutes and poke holes all over the cake.
  • In a small sauce pot, combine Dulche De Leche and heavy cream. Set the temperature on medium, cook whisking constantly until heated through. Take off heat. Separate in two portions.
  • Mix the first half of the Dulche De Leche mixture with coconut.
  • Pour the other half over the cake. Spread it slowly and evenly, pressing gently.
  • Spread the coconut mixture over the cake. Cool completely.
  • Drizzle with a hot fudge.

    March is usually the time the GS troops get out and sell their cookies but I haven’t seen any. Maybe at another location. Will look or call the GS headquarters tomorrow. Wonder if you can order them online? I was cookie chairperson when my daughter was in GS and I remember having $1600 worth of cash under my bed till I could get it to the bank the next day. I don’t remember sleeping much that night. Our neighborhood was safe but that was a lot of money back then to have in your house. She’s going on 45 years old now. Wonder if she remembers that time frame? She went as Jr Girl Scout and dropped out because the GS leader had 2 bratty daughters that had to be ADHD and disrupted every meeting, mostly arguing with their Mother. Not only did my daughter drop out because of the disruption to the meetings but so did several other girls. The GS leader was a divorcee and I have a feeling she and the Ex didn’t keep things calm in front of the daughters. The Mother was probably doing the best she could in her situation at that time.

      Ann, I get it in the baking isle, it should be around the same area as condensed milk and evaporated milk. (It’s in a small can)

    This cake looks so delicious–I thought I’d gotten everything to make it, but now I read the pan size. I have 13×9 or 9×9, or Bundt, or angel food . . . any advice on which would go better in lieu of an 11×9 pan?

      Hi, Kristen! Go ahead and use 13×9, it will just be a little thinner. Also remember to adjust your baking time!

    Wow tough question bc I am crazy over cheesecake but samoas are also my favorite cookie in the world! This looks amazing! Just one question that may be silly but what is the Dulche De Leche and what aisle would I find it in? Is it a type of condensed milk?

      Sorry it took me so long to reply, you can fing Dulche De Leche right next to condensed milk. It has a caramel color to it but it does not taste quite like caramel. All it is, is cooked condensed milk.
