Sweet Potato Cheesecake

We eat more sweet potatoes in the fall than the rest of the year combined, between the pies, casseroles, and cakes. This cheesecake takes all those cozy flavors and turns them into velvety and rich sweet potato cheesecake, finished with gooey, toasted marshmallows on top.

What I Love About This Sweet Potato Cheesecake

Sweet potato casserole and cheesecake sound like they shouldn’t work together, but the warm spices and creamy texture turn out to be a natural match. If you want more sweet potato desserts, my sweet potato pie and sweet potato casserole cake are both worth trying too.

  • It tastes like biting into sweet potato casserole, but in a smooth, creamy cheesecake form instead.
  • Baking the sweet potatoes a day or two ahead means the actual cheesecake-making part goes quickly.
  • It’s a make-ahead dessert, which makes it one less thing to worry about on a busy holiday.

Key Ingredient Notes

  • Sweet potatoes – fresh, baked and mashed sweet potatoes give the best flavor and texture here. Canned sweet potato puree can work in a pinch at roughly the same amount, though canned puree tends to hold more moisture, so the batter may turn out a touch looser.
  • Cream cheese – use full-fat, original cream cheese, and take it out of the refrigerator 30-45 minutes before you start. Don’t try to make this “lighter” with anything other than full-fat cream cheese, since it changes the texture.
  • Eggs – take these out of the refrigerator ahead of time too, so they’re room temperature before mixing.
  • Heavy whipping cream – don’t substitute this with a lower-fat dairy product. If you need to, half-and-half can work, but use about a tablespoon less, since it’s thinner than heavy cream.
  • Pumpkin pie spice – despite the name, pumpkin pie spice doesn’t actually contain pumpkin. It’s a blend of cinnamon, nutmeg, ginger, and cloves, all of which pair wonderfully with sweet potato.
  • Marshmallows – regular-sized marshmallows, spread over the cold cheesecake and toasted under the broiler right before serving.
  • Gluten-free note – the graham cracker crust is the only part of this cheesecake with gluten. Swap in gluten-free graham crackers to make the whole dessert gluten-free, and double-check labels on the rest, since they should already be gluten-free.

How to Make Sweet Potato Cheesecake

  1. Bake the sweet potatoes – Wash and pierce each sweet potato with a knife, wrap individually in foil, and bake at 350°F for 1.5-2 hours, until very soft all the way through. Let them cool, then peel and mash with a fork until smooth. This part can be done a day or two ahead and refrigerated.
  2. Prep the crust – Wrap the outside of the springform pan in foil, since even well-used pans can let a little water seep in during the water bath. Combine the graham cracker crumbs, melted butter, vanilla, and pumpkin pie spice, then press it into the bottom of the greased pan.
  3. Make the filling – Beat the cream cheese until smooth and fluffy, scraping the bowl as needed. Beat in the sugar, then the eggs one at a time, mixing just until each one is incorporated before adding the next, so the batter doesn’t take on too much air. Add the mashed sweet potatoes, sour cream, vanilla, and heavy cream, and beat until fully combined. Lower the speed and mix in the cornstarch and pumpkin pie spice, stopping as soon as they’re incorporated to avoid overmixing the batter.

  1. Bake – Pour the filling into the crust and set the springform pan inside a larger roasting pan. Add hot water to the roasting pan, about halfway up the sides of the springform. Bake at 325°F for 80-85 minutes, until the edges look set but the center still jiggles slightly when you gently shake the pan.
  2. Cool gradually – Turn off the oven and open the door partway. Letting the cheesecake sit and cool down slowly like this is what helps prevent cracks on top.
  3. Chill – Once cooled to room temperature, cover and refrigerate for at least 6 hours, or overnight.
  4. Toast the marshmallows – Spread marshmallows over the cold cheesecake and broil on low, watching closely, until golden brown. Marshmallows can go from golden to burnt in seconds under a broiler, so stay by the oven the whole time instead of stepping away.

Topping Options For Sweet Potato Cheesecake

There are a few more options you can do instead of or in addition to the mini marshmallows:

  • Crushed pecans – add a layer between the crust and filling, or between the marshmallows and the cheesecake.
  • Pralines – chop them up and scatter over the baked cheesecake before adding the marshmallows.
  • Caramel – drizzle it over each slice as you serve.

Storing and Freezing Recommendation

  • Store: in the refrigerator, right in the springform pan, covered tightly with plastic wrap.
  • How long it keeps: up to a week when properly covered and refrigerated.
  • Freezer: freeze without the marshmallow topping. Once fully cooled, run a butter knife around the inside of the springform pan to release it, then freeze uncovered for about an hour to firm up. Wrap tightly in plastic wrap, then foil, and freeze for up to 2-3 months. Thaw slowly in the refrigerator, then add and toast the marshmallows fresh before serving.

Sweet Potato Cheesecake Recipe FAQs

Can I use canned sweet potato instead of fresh?

Yes, canned sweet potato puree works as a substitute at roughly the same amount. Since canned puree holds more moisture than fresh mashed sweet potato, the batter may come out slightly looser, but it should still set up fine.

What happens if I skip the cornstarch?

The eggs in this recipe do most of the actual thickening, so skipping the cornstarch won’t stop the cheesecake from setting. Cornstarch mainly helps the texture stay a little more stable and can reduce the chance of cracking, so leaving it out just makes those things slightly less certain, not the whole recipe.

Why is there pumpkin pie spice in a sweet potato cheesecake?

Despite what the name suggests, pumpkin pie spice doesn’t contain pumpkin. It’s a blend of cinnamon, nutmeg, ginger, and cloves, and all of those spices pair naturally with sweet potato.

Ingredients

Crust:

  • 1 1/2 cups graham cracker crumbs
  • 5 tbsp salted unsalted butter melted
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract

Cheesecake Filling:

  • 2 cups mashed sweet potatoes 2 medium sweet potatoes, about 1.75 lbs
  • 24 oz cream cheese softened
  • 1 cup light brown sugar packed
  • 1/4 cup sour cream
  • 2 eggs room temperature
  • 1/2 cup heavy whipping cream
  • 2 tsp pumpkin pie spice
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract

Topping:

  • 8 oz marshmallows

Instructions

Sweet potatoes:

  • Wash sweet potatoes and pierce each one with a knife.
  • Wrap each sweet potato with aluminum foil and place them on a baking sheet.
  • Bake sweet potatoes for 1.5-2 hours, until fork tender inside.
  • Let potatoes cool before peeling the skin off and mashing it. Once cooled, take off the skin and mash the sweet potatoes with a fork until smooth.

Crust:

  • Prepare the springform pan by wrapping outside of the pan in aluminum foil. Many springform pans, especially ones that have been used quite a bit, have a chance of leaking some water inside. Wrapping outside of the springform in foil will help keep water out.
  • Combine graham cracker crumbs, melted butter, vanilla extract, and pumpkin spice in a mixing bowl and mix very well.
  • Spray inside of the springform pan with some cooking spray, making sure you get the sides too.
  • Spread crumb mixture in the bottom of the prepared springform, evenly pressing it over the bottom and a little up the sides.

Cheesecake Filling:

  • In a bowl of an electric mixer, beat cream cheese on medium-high speed until smooth and fluffy. Scrape sides and bottom on the bowl and beat for another minute.
  • Pour in sugar while beating and add eggs, one at a time. Beat it until smooth. Stop to scrape bottom and sides of the bowl.
  • Add mashed sweet potatoes, sour cream, vanilla extract, and heavy cream and beat, still on medium-high speed, until all mixed very well.
  • Lower the speed and beat in cornstarch and pumpkin pie spice. Scrape sides and bottom of the bowl and mix for a few more seconds to make sure everything is evenly mixed.

Baking Cheesecake:

  • Transfer batter into the springform and spread in evenly.
  • Preheat oven to 325°.
  • Place a large roasting pan into the oven and place cheesecake springform inside the roasting pan. Carefully add hot water to the roasting pan, about half way up the side of the springform.
  • Bake for 80-85 minutes. Turn off the oven and open the oven door half way. Let cheesecake rest for 10 minutes and take it out of the oven. Take the foil wrap off the pan.
  • Let it rest for 10 minutes on the counter and then gently run a butter knife between sides of the cheesecakes and the springform to carefully separate it. (You don’t actually have to take the cheesecake out of the pan until ready to serve.)
  • Cool cheesecake for an hour and then cover the pan with plastic wrap and refrigerate for 6 hours or overnight.

Topping:

  • Set the top rack of the oven about 6-7 inches away from the broiler and turn on the broiler to low setting.
  • Spread marshmallows over the cold cheesecake and let it toast in the oven until the top is golden brown. Take it out and cool for a few minutes before cutting.

      Despite the popular belief that pumpkin is in pumpkin spice, it doesn’t actually have pumpkin in it. It does have cinnamon, nutmeg, ginger, and cloves all of these spices go wonderfully with sweet potato cheesecake. I do hope you give it a try.
