This is a mouthwatering, easy meal idea that the whole family will love! Crispy baked French Fries loaded with hickory-smoked pulled BBQ pork, sauteed mushrooms and onion and lots of cheese!

Summertime is a season loaded with family activities, vacations, camping trips and all the family fun stuff we can possibly fit into one day. My Instagram and Facebook feeds are packed with people sharing their summer adventures. It’s amazing how busy a “relaxing” season can really be!

I never realized the joys (and exhaustion) of having kids home from school. Before my little guy (who is growing way to fast by the way) was in school, I didn’t understand what people meant when they talked about summertime and kids.  Now I completely understand. The whole year, you can’t wait for summer because the kids will be home, the days will be full of family fun and you get to go on vacations. About two weeks into summer, you almost start to wish it was back to school time because the kids are home all day now (mom, mom, mom, mama, mama, mama…), the days are full of family fun (every minute!) and everyone wants to be entertained every second because they are just bored all the time now.

Everyone is bored and always hungry…what is up with always hungry??

Speaking of hungry, there is definitely less time to devote in the kitchen during summer. Quick, easy and delicious goes a long way during this busy season. That’s why these BBQ Pulled Pork Loaded Fries are so perfect!

These crispy baked fries are topped with delicious Byron’s cooked and ready pulled BBQ pork. I’ll be honest that it was much more delicious than I originally expected. It was my first time trying Byron’s BBQ and I really liked it! (Made a pulled BBQ sandwich with it for lunch today too!)

It’s available at Sam’s Club locations nationwide. It’s prepared the way real BBQ should be made – hickory-smoked for hours, hand-pulled off the bone and seasoned perfectly with high-quality spices and sauces. There is also not a laundry list of additives or preservatives to keep this BBQ tender and juicy, which is why it’s found in the frozen food aisle.

BBQ Pulled Pork Loaded Fries {Simple Summer Celebration Giveaway}

Ingredients

  • 1 lb French Fries
  • 2 cups BBQ pulled pork
  • 1 cup sliced mushrooms
  • 1/2 cup sliced onions
  • 1 cup shredded four cheese mix
  • 1-2 tbsp Chives for topping optional

Instructions

  • Bake fries according to the package, until it's crispy.
  • While fries is baking, sauté mushrooms and onions with a little bit of salt and pepper, until onions are golden brown.
    Add pulled pork and sauté onions, mushrooms and pork together for a few minutes.
  • Once fully baked, lay out fries in an oven-safe serving dish (skillet, or baking wish), spreading it evenly, top it off with pulled pork mixture. Top it off with shredded cheese and put it back in the oven until cheese is melted. (You can also set it under broil.)
  • Sprinkle with some chopped chives and serve.
