Most of the week seems like such a blur to me. Running around between school, school work, work and kiddo is exhausting and leaves me with not much time. I’m glad that it’s Thursday and I get a little break before it all starts all over.
Monday through Wednesday, I have classes and those are my busiest days. Sometimes, Boys have to fend for themselves in terms of food and I grab things on a fly. They don’t mind too much because if I didn’t make anything, that means ordering pizza or other take out while I’m in class. I try hard not to go through the drive through myself and instead make myself something quick and healthy.
My first semester of grad school, I underestimated just how busy I can be. I quickly realized that I don’t have much time to eat and got into some bad habits. I used to snack all day, eat on a go and go through drive through way too often. I had to get out of that slump very fast and find some easy and fast ideas for lunch and dinner. Recently, I found a new product that I love. It’s Ocean Naturals Skipjack Tuna.

Ocean Naturals offers two varieties of tuna — skipjack and albacore. This tuna is processed and canned without fillers or additives. There are only THREE ingredients in this Skipjack tuna: tuna, salt and water! It is very important to me because I usually prefer to “make my own” foods due to too many odd ingredients in store-bought. For example, I make my own applesauce because the list of ingredients in store-bought applesauce goes on and on. Mine has two…apples and cinnamon.
Needless to say, it’s very refreshing to find a store bought product that is made without fillers or additives! Their motto is “Good, Good for You, Good for the Planet” and they definitely live up to it.
This is one of my go-to lunch sandwiches now. I love that it’s full of fresh veggies, great tuna, herb aioli and Greek flavors are never dull and never disappoint!
I love aioli but sometimes, I’m short on time to make it from scratch. So I take a shortcut and use mayo. It’s just as delicious!
Greek Tuna Sandwich In A Pita with Easy Herb Aioli
- 1/2 cup of mayo
- 1 tbs grapeseed oil
- 1 tsp virgin olive oil
- 1/2 tsp Dijon mustard
- 2 garlic cloves
- 1 tsp fresh lemon juice
- 2 tsp minced fresh herbs (dill weed and parsley)
- salt and pepper
For Greek Tuna Salad Sandwich
- 1 fresh baked pita find it in bakery section or use your favorite pita
- 1 can of good quality tuna in water
- 1/2 large green bell pepper
- 1 small tomato
- 2 tbs chopped green onion
- 2 tbs sliced black olives
- 2 tbs chopped banana peppers
- 1/4 cup sliced red onion
- 1/4 cup feta cheese
- 2-3 tbs herb aioli
- salt and pepper to taste
- For aioli, just whisk the ingredients vigorously, until all well blended.
- Combine the ingredients for the sandwich (except pita of course) in the bowl and gently fold until the aioli is evenly spread but the tuna is still chunky.
- Cut the pita in half and divide the Greek tuna chunky salad between the two halves.
