Delicious fall coffee treat! White chocolate mocha latte made with pumpkin and pumpkin spice. This coffee looks and tastes rich and decadent but it’s actually light.

It’s been quite a crazy month for me, busy and stressful. Finally, driving back from the playground one afternoon, I was looking at the pretty afternoon sky and trees and it just felt like fall, felt peaceful too. In my mind, I could imagine the crisp fall air and the fall smells …all that until I looked at my car thermometer that read 94! That snapped me right out of my fall mood.
Never the less, it’s getting more and more beautiful every day. I especially love the fall sky. October has the prettiest sky, don’t you agree? I can’t wait for next month.
I’m getting my fall fix in the kitchen until the weather gets cooler. That means fall drinks and treats. This coffee drink is both in one. It’s a treat and a drink …and it’s also made to be light. It looks and tastes indulgent but it’s really not. Just use lighter milk and a sugar substitute if you wish.
Pumpkin White Chocolate Mocha Latte
- 1 1/2 cups strong coffee
- 1/4 cup skim milk
- 3 Tbsp pumpkin puree
- 2 oz white chocolate chips or bar
- 1/2 tsp pumpkin spice
- 1 oz simple syrup
- Light whipped cream optional
- Add coffee to the small sauce pot and heat it through over medium heat.
- Stir in white chocolate until melted.
- Stir in pumpkin puree, pumpkin spice and simple syrup.
- Stir in milk and cook for just a couple of minutes.
- Top off with whipped cream right before serving.
