I was at the store yesterday and, I gotta say, I was lucky to get some produce. People were just grabbing all they can, stocking up for the big barbecue weekend. One lady actually asked me if I needed to get some corn because she was planning on getting all of it! It must be one big party she is planning. Good thing I didn’t need any ground meats or ribs! Those shelves were looking sad and nearly empty.

Well, whatever you will be grilling this weekend, you will be needing this broccoli salad on your plate!

Fresh, beautiful summer salad that has the best combination of flavors. Strawberries and maple syrup in the dressing add a perfect amount of sweetness. Goat cheese is paired great with strawberries and broccoli and pecans add that nuttiness that’s missing.

Strawberry Broccoli Salad

Strawberry Broccoli Salad
Serves: Serves 4
  • 4 cups of chopped broccoli florets
  • 2 cups of chopped fresh strawberries
  • ¼ cup of chopped pecans
  • ⅓ cup of goat cheese
  • 5 oz Greek plain yogurt
  • 2 tsp maple syrup
  • 1 tsp lemon juice
  • salt
  • ½ Tbsp poppy seeds
  1. Combine broccoli, strawberries, goat cheese and pecans in a large mixing bowl.
  2. In a small bowl, mix Greek yogurt, maple syrup and lemon juice, mix well.
  3. Mix the dressing into broccoli mixture until all evenly coated.
  4. Add some salt and poppy seeds, mix well.
  5. Refrigerate until ready to serve.

    I can’t wait to get home and make this — normally I would not say I can’t wait to get home from a perfectly good vacation but this recipe sound too good not to share with the entire family.
