Waffles aren’t just sweet anymore, friends! And don’t get me wrong – I still love me some good ol’ classic buttermilk waffles with a generous drizzle of maple syrup. But there’s just something unique and fun about these bacon and green onion waffles that always hit the spot! They’re such a huge hit every time I serve at brunch parties with friends.

Also, I happen to know that these savory waffles pair fabulously with a bloody mary! It’s the ultimate weekend brunch combo. And if you’re anything like me, you like to garnish your Bloody Mary with a thick piece of bacon. The bacon garnish and bacon waffles go together so harmoniously!

So next time you want to really impress your guests or just treat your family to something a little different, this is the recipe for you. The best part is just how easy this recipe is to toss together! There’s a big chance you already have everything (or mostly everything) you need in your kitchen right now that you need.

Lyuba’s Tips to Make Savory Waffles

  • Low fat buttermilk – I found that low fat buttermilk give waffles (and pancakes) a better texture than full fat buttermilk.
  • It’s best to let your cold ingredients like eggs and buttermilk get to room temperature. Take out the eggs and measure out the buttermilk. Let it sit on the counter for about 30 minutes.
  • Let the waffle batter sit for about 15 minutes. This will give all of the ingredients a chance to activate and will result is softer, fluffier waffles.
  • Make sure to lightly grease the waffle maker with oiled paper towel (not cooking spray) and cook waffles in a waffle maker per your waffle maker’s instructions.
  • To keep cooked waffles warm while making the rest, preheated the oven to 200°F and keep waffles in the oven on a baking sheet.

Some Fun Ways To Serve These Waffles

  • Use the savory waffles as a bread for breakfast and lunch sandwiches!
  • It’s great to use these waffles as a bread for grilled cheese sandwiches.
  • I love using savory waffles as a base for chicken and waffles.
  • You can always feel free to serve them on their own, topped with some sour cream or plain Greek yogurt and shredded cheese.
  • Or, you can serve them as an appetizer cut into smaller pieces and topped with smoked salmon, or sliced chicken breast and a dollop of sour cream.
  • Sometimes, I like to serve them with some sausage gravy on top.
  • It’s nice to dip savory waffles in some creamy ranch dressing.

Variations You Can Try

  • Add some cheese! You can mix in 1/2-3/4 cup of shredded cheese like cheddar, gruyere, Gouda, smoked provolone, or pepper jack.
  • Substitute cooked ground sausage or finely diced ham instead of bacon.
  • Add some herbs.
  • Mix in some sauteed veggies like onions, bell peppers and mushrooms. Just make sure not to add any extra liquids.

Ingredients

  • 3 eggs
  • 1 1/2 cups low fat buttermilk
  • 1/2 cup unsalted butter, melted
  • 2 cups all purpose flour
  • 1 tsp coarse salt more or less to taste
  • 2 Tbsp white granulated sugar
  • 1 Tbsp baking powder
  • 1/2 tsp baking soda
  • 1/3 cup chopped green onion chopped
  • 8 cooked crispy bacon strips chopped

Optional addition:

  • 1/2 cup grated cheddar cheese

Instructions

  • Tip: It’s best to let your cold ingredients like eggs and buttermilk get to room temperature. Take out the eggs and measure out the buttermilk. Let it sit on the counter for about 30 minutes.
  • In a mixing bowl, whisk eggs vigorously for a few seconds.
  • Whisk in the melted butter, buttermilk, sugar and salt.
  • Add the flour, baking powder, baking soda, and carefully whisk until combined.
  • Fold in the chopped crispy bacon and green onion (and cheese if using).
  • Let the batter sit for 10-15 minutes while preheating the waffle maker. 
  • Lightly grease the waffle maker with oiled paper towel (not a cooking spray) and cook waffles in a waffle maker per your waffle maker’s instructions.

Notes

  • Gluten Free: to make these waffles gluten free, you can substitute 1:1 gluten free all purpose flour instead of regular flour. All remaining ingredients should already be gluten free but double check the nutritional information on the packaging just in case.
  • Storing: You can easily store them in the fridge for a couple of days. Just make sure to store them in an airtight container. The waffles should keep for up to 5 days, but they do start to dry out after 2 days. It’s best to store them in the freezer for more than a couple of days. 
  • Reheating: To reheat cold waffles – Preheat the oven to 350°F, place the waffles on a wire rack inside a baking sheet, and reheat for about 5 minutes. To reheat frozen waffles in the oven – Still do it at 350°F, but they’ll need a couple extra minutes. In the air fryer, reheat waffles at 360°F for 2-3 minutes. Frozen waffles will need a couple extra minutes. 
  • Freezing: cool waffles quickly on a wire rack. This will cool the waffles evenly and keep the bottom of the waffles from getting soggy. Place all of the savory waffles into a large zip-lock freezer bag. Or, you can place each waffle into a smaller individual freezer bag. Get as much air out as you can and close the bag tightly. Label and date the bags. You can freeze savory waffles for up to 3 months.
