I was very happy working on this book because I absolutely adore pumpkin and I’ve loved it ever since I was a kid. My grandmother used to grow pumpkins and I remember helping her in the garden. Although, my favorite part was harvest time and eating time of course. She used to make many different things with pumpkin and she always got me to try it. I was a picky kid like so many kids are, and getting me to try something different was not easy. But, I distinctly remember pumpkin dishes. For me, pumpkins were never about decorating or carving, it was always a delicious treat I waited “patiently” for every year.
This book, is all about using pumpkin in every way possible. The best part is, I am still full of ideas that I can’t wait to share.
You might think that making a whole book of pumpkin recipes could get overwhelming but not for me. So many people asked me if I was sick of pumpkin yet and I’d just laugh and say, “neva!” I’m always ready to jump into creating more pumpkin recipes.
This cookbook is full of pumpkin goodies to create and share with your family and friends. There are over seventy recipes for breakfast, lunch, dinner, appetizers, and desserts, this book is stuffed with tasty and tempting treats you are sure to love. And please don’t miss extra recipes that had to be cut from the book. I added them all here, for you to try.
Easy Caramel Pumpkin Pull Apart Bread
To celebrate release of my book, I made us some quick pumpkin pull apart bread. It’s quick and easy to make and you won’t be able to stay away from this delicious treat. Just get some pre-made pizza dough from the deli section of your grocery store and you will be ready to go. This bread will be perfect with morning cup of tea on a lazy weekend morning or as a snack for kids coming back from school.
Easy Caramel Pumpkin Pull Apart Bread and The Pumpkin Lovers Cookbook
Quick and easy pull apart bread where each layer is slathered in a sweet combination of pumpkin, caramel, and pecans.
- 1 lb pizza dough
- 2/3 cup pumpkin puree
- 1/2 cup crushed pecans
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp allspice
- 1/4 tsp nutmeg
- 1 Tbsp melted butter
- 1/4 cup caramel sauce
- 1/4 cup caramel sauce to drizzle on top
- Flour for surface
- Preheat oven to 350 and grease an 8x4 bread loaf pan.
- Roll out pizza dough into a rectangle that's about 16x8 inches in size.
- In a small mixing bowl, combine pumpkin, sugar, spices and pecans. Mix until all incorporated.
- Brush dough with melted butter and drizzle 1/4 cup of caramel all over the dough.
- Spread pumpkin mixture evenly all over the dough.
- Cut the dough easily using a pizza cutter, lengthwise, into three long strips. Then cut in width-wise, creating squares. Stack squares and place them side-by-side into the prepared loaf pan. Drizzle some more caramel over the top and place in the oven.
- Bake for 35-38 minutes.
