Greatest Pumpkin Pie and Pumpkin Patch 2012


Last week, I shared a glimpse into our wonderful day on the farm, when I shared my Apple Caramel Cupcakes. I did promise to share with you what I made with the pumpkins from the pumpkin patch, so here is it! I am sharing my pumpkin pie recipe, I’ve been using for years.
Every year, when I get the first pumpkins at the pumpkin patch, I make this pumpkin pie. It’s usually gone in less than 24 hours, so I make it pretty often throughout the season.

You know, this was the first time that we went to the pumpkin patch as a family. For some reason, we never made it out there together. I’ve heard about this great farm, about an hour from us, that does all fun kids activities including hay ride, corn maze, petting zoo, pumpkin patch, corn pool (fun!) and other fun stuff. Since the little guy is old enough to enjoy all these activities, we went to this farm as soon as they opened for the season. We had a awesome time!

All was wonderful, until it got close to the nap time and lunch time. That is when someone…won’t name any names…started to get cranky and Mr. Tantrum showed up. Before we left, I had to take him to potty as it was a long trip home. Have you ever tried taking someone who is in the middle of a tantrum to potty? No? You should try…test your skills! (I hope that you’ve guessed by now that I am not talking about my husband)
Well, to some of you (family members) it will be funnier than to others, but we LOST A SHOE in the process!! It seems to be a pattern with us. Only this time, no one was about to try and fish out the shoe. It was at the bottom on a porta-potty.
On the lighter note, this is the face right before the tantrum!

All was well after we had lunch. He even danced in the booth, at the restaurant, to some Led Zeppelin!

Pumpkin Pie

2 cups of Homemade Pumpkin Puree
10 oz evaporated milk
2 eggs
3/4 cups of sugar
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp  all spice
1/4 tsp nutmeg

9-inch deep dish pie crust shell
Pie crust sheet

1. Preheat the oven to 350.
2. Combine the pie ingredients in a bowl and whisk until all mixed.
3. Pour the mixture into the pie shell and bake for 45 minutes.
4. Meanwhile, print out a large fall leaf and cut it out. Place to leaf on top of pie crust sheet and cut out the fall leaf.
5. After 45 minutes of baking, pull out the pie and place the fall leaf in the center. Bake for another 15 minutes.
