1. In a metal bowl, beat the heavy cream. Slowly add the sugar and keep beating on medium speed until stiff. (about 5 minutes)
2. Scoop about 1/4 cup of whipped cream in the center of a crepe, crepe should be room temperature
3. Roll the crepe, and repeat
4. Drizzle with chocolate syrup, then drizzle the caramel syrup
