I get a little sad when Christmas is over. Months of preparation and anticipation are over in one day and then it’s all done.
Christmas is like a wedding. It takes so long to plan, shop, and wait for the big day. Then, the big day comes and there is lots of excitement, you’re not really sure what’s happening, and there are people everywhere with food, booze and presents. Afterwards, everyone leaves and the feeling of relief comes.
After all the presents have been played with and put away, I get a little sad. There is nothing but cleaning up left and going back to work. Going back to work is the saddest part though.
New Year’s used to be a huge holiday for me. In Russia, New Year’s is THE biggest holiday of the year. The presents, the decorations, and the tree are all for New Year’s. Kids get to stay up past midnight and celebrate with adults. Lot’s of fireworks, food, and did I mention the presents?
New Year’s was my absolute favorite holiday, even after I moved to US and started celebrating Christmas in addition to New Year’s. It was my favorite holiday until I had my son. When you have kids, partying all night is not the best anymore. Kids don’t seem to care what holiday it is, they still get up very early in the morning the next day.
I stopped making New Year’s a big deal while the kids are so small. I can never find a baby sitter and the older I get, the harder it becomes to function on only a couple of hours of sleep. My little guy never even wanted to stay up with us to watch the ball drop, so he was fully rested at 7 am. When I was a kid, getting to stay up was the best part and he just wants to go to sleep.
But, even without big booming parties, my husband and I get some champagne, some snacks, and watch Time Square festivities from the comfort of our bed. This year, I will be making us some Queso Blanco Dip and these Mushroom Cheese Puff Bites. It will be a cheesy New Year celebration!
Mushroom Cheese Puff Bites
- 2 sheets of puff pastry
- About 2 Tbsp oil for cooking
- 16 oz mushrooms
- 1 medium yellow onion
- 6 garlic cloves
- 12 oz sharp white cheddar cheese
Thaw pastry sheets and lay them on a large cutting board.
Preheat oven to 400 and grease a muffin pan. (24-cup muffin pan or 2 of the 12-cup ones.)
Preheat a large cooking pan over medium-high heat. Add oil.
Dice onion and garlic and saute until onion is transparent.
Dice mushrooms and add them to the pan. Season with some salt. Saute over medium-high heat until done. Drain off liquid and transfer mushrooms to the mixing bowl.
Let mushrooms cool a little bit and then, mix in grated white cheddar cheese. Mix well.
Roll puff pastry a little bit (just a little) and cut the sheets into 9 squares each.
Place each square into the muffin cup, forming a little cup out of the pastry square.
Fill each pastry square with about 1 1/2 tablespoons of mushroom cheese mixture.
Bake for 15-17 minutes, until pastry is golden-brown.
