Chipotle Cilantro Lime Roasted Potatoes

Always popular and easy side dish. Roasted potatoes flavored with fresh cilantro, lime juice and chipotle chili powder for a great smokey taste.

So Happy November!

Holidays are pretty much under our noses now. Getting a little panic setting in yet? I sure am. My holiday menu is not planned and my Christmas shopping is not even started. I have some friends who are already done with their shopping and I just look at them in disbelief. HOW? I haven’t even began to think about what I will be getting for presents yet. To be honest, I’ve been so busy that it gives me a bit of an anxiety to think about the holidays.

I bet you thought that I have my holiday menus all figured out since I’m a food blogger and I post holiday recipes all month long. Nope! Not even close. I think about you more than my own menu. Although, Thanksgiving is always easy since no one would budge on the “traditional menu.” Now Christmas is my time to get creative. I try to change the menu every year because I love to change things up a bit.

 So November is my time to bring you as many holiday ideas as I can. This side dish is definitely one of them and a good one. Potatoes are definitely a staple on the holiday menu. They might take a different form, but chances are that they will make an appearance at every holiday dinner. Roasted potatoes are my favorite way to serve potatoes. With this recipe, I wanted to play around with flavor a bit and it came out very tasty. Simple, yet it has a smokey attitude.

Chopotle Cilantro Lime Roasted Potatoes

Roasted potatoes flavored with fresh cilantro, lime juice and chipotle chili powder for a great smokey taste.

Ingredients

  • 3 lbs of red potatoes
  • 2 Tbsp olive oil
  • 2 Tbsp minced cilantro
  • Juice from 1/2 lime
  • 1 tsp lime zest
  • 1 tsp chipotle chili powder
  • Salt to taste

Instructions

  • Preheat the oven to 400° and grease a large baking sheet.
  • Chop potatoes into about 1/2 inch pieces and place them into a large mixing bowl.
  • Add olive oil, lime juice, lime zest, cilantro, chili powder and salt. Mix very well, until all evenly coated.
  • Spread potatoes on the baking sheet in one layer and try not to crowd them too much.
  • Bake fore 35-45 minutes, until nicely golden brown. (Time will depend on how big you cut your potatoes.)
