What Makes This Green Goddess Dressing So Good

The key to a great homemade green goddess dressing is using the freshest herbs you can find. If you have an herb garden, this is the perfect recipe for it. Parsley, dill, cilantro, basil, tarragon, and mint come together to create something deeply aromatic and layered. Tarragon in particular gives this dressing its signature slightly anise-like complexity.

  • Six fresh herbs create incredible depth, not just color.
  • Lemon juice and zest add a bright, clean acidity that cuts through the creaminess.
  • Anchovy paste adds deep, savory umami without any detectable fishiness.
  • Mayo and sour cream make the base luxuriously smooth and rich.
  • Ready in ten minutes and keeps for a full week in the fridge.
  • Works as a dressing, a dip, a sauce for tacos and burgers, and a drizzle for roasted vegetables.

Ingredients You’ll Need

labeled ingredients to make green goddess dressing on light wooden board.
  • Mayonnaise: Full-fat gives the richest, creamiest result. Low-fat works but the texture will be slightly thinner.
  • Sour cream: Full-fat is best. You can substitute plain whole-milk Greek yogurt if needed, but the flavor will be tangier and a touch lighter.
  • Lemon: You need both the juice and the zest of one fresh lemon. Bottled lemon juice will not give you the same brightness and flavor.
  • Fresh herbs: Parsley, tarragon, and chives/scallions are the essential trio. Parsley is the backbone of the dressing, tarragon gives it that signature slightly anise-like complexity, and chives add a delicate onion note. The remaining herbs, including dill, cilantro, basil, and mint, are flexible but highly recommended. Use what you have in the fridge or whatever is growing in your garden, any combination works beautifully.
  • Anchovy paste: It blends in completely and adds deep savory flavor without any fishiness. If you want a substitute, 1 teaspoon of white miso paste is the closest option.

How to Make Green Goddess Dressing

ingredients for green goddess dressing in the blender
  1. Add all of the ingredients to a blender or food processor and pulse, scraping down the sides as needed, until the dressing is completely smooth and bright green.
  2. That is really all there is to it. The key is not to rush the blending. Scrape the sides a couple of times to make sure every bit of herb gets fully incorporated.
  3. Blender vs. food processor: A blender will give you a smoother, more uniform dressing with a vivid, bright green color. A food processor will leave small flecks of herb throughout, giving the dressing a slightly chunkier, more rustic texture. Both are delicious, so use whatever you have. If your blender is small or underpowered, the food processor is the more reliable choice since there is not a lot of liquid in this recipe to help it spin.
  4. Use right away or transfer to a glass jar with a tight-fitting lid and refrigerate until ready to use.

  • Use the freshest herbs you can find. This dressing depends on fresh herbs entirely. Dried herbs will not work here. They lose the vibrant color and the bright, aromatic flavor that makes green goddess dressing what it is.
  • Do not over-blend. Blending too long generates heat and causes the herbs to oxidize, turning the dressing brown. Blend just until smooth and stop. This is a real technique insight that is not obvious.
  • Blender for smooth, food processor for texture. If you want that silky, restaurant-style consistency and a brilliant green color, use the blender. If you prefer a little texture and do not mind flecks of herb, go with the food processor.
  • Pour, do not scoop. When serving from the jar, pour the dressing directly rather than dipping a spoon in repeatedly. Introducing a utensil each time can introduce bacteria and shorten the shelf life.

Storing Recommendation

  • Once blended, you can store your homemade dressing in an airtight glass jar or a dressing container.
  • Make sure you keep this creamy dressing in the refrigerator, NOT at room temperature! Properly stored, Green Goddess Dressing should be good for about a week.
  • When you need to use some dressing, be sure to pour it straight from the container, as opposed to using a spoon to scoop it out.

Serving Suggestions

  • Enjoy this dressing with any of your favorite salads! Use kale, arugula, chopped romaine, or any other leafy green as your base of choice. Toss any of your favorite vegetables into the mix, like sliced avocados, chopped cherry tomatoes, or red onions.
  • Alternately, you can also drizzle your dressing over quite a few dishes. Try it with your Oven Roasted Potatoes, sliced Spatchcock Chicken, or an array of veggies.
  • One of my absolute favorite ways to serve Green Goddess Dressing is as a dip option on a crudité board! Sugar snap peas, carrots, and cucumbers are all delicious when dipped into this homemade dressing.
  • Use this dressing when making tacos, wraps, and sandwiches as well. It would be great with salmon tacos and pulled chicken tacos. It will also be fantastic on turkey burgers and chicken burgers.

Green Goddess Dressing Recipe FAQs

Is green goddess dressing gluten free?

Yes, green goddess dressing is gluten free as it does not contain any glutenous ingredients. As always, double check the label ingredients to make sure.

Can I made this dressing dairy free or vegan?

To make it dairy free, substitute the sour cream with a plant-based sour cream.
Mayonnaise is made from oil and egg yolks and does not typically contain dairy.
To make it vegan, substitute both the mayonnaise and sour cream with plant-based versions, and replace the anchovy paste with crumbled dried nori (or, miso, or a splash of soy sauce) for a similar briny, umami quality.

Can I use dried herbs in green goddess dressing?

No. The fresh herbs are what give this dressing its vibrant, full flavor. Dried herbs will blend but not incorporate into the flavor well, resulting in a dull, flat-tasting dressing that is grainy. The only exception is dried dill in a pinch, but even then, fresh is significantly better.

What if I do not want to use anchovies in green goddess dressing?

The anchovy paste blends in completely and adds depth without any fishy taste. It is worth trying even if you are skeptical. If you want to leave it out, substitute 1 teaspoon of white miso paste for a similar savory, umami quality.

For something classic and crowd-pleasing, homemade ranch dressing made with fresh herbs and buttermilk is a staple worth keeping in the fridge at all times, and blue cheese dressing is rich, tangy, and so much better than anything from a bottle.
