This is another salad that I make for lunch or sometimes dinner to help me avoid the carbs, I try so hard to avoid! It’s also perfect when you just feel like having a good but light lunch!
Parsley (fresh is optional, you can always add dry)
1. Boil the eggs (or make some ahead of time and keep in refrigerator), let them cool, cut the into small cubes.
2. Cut the cucumber and radish
3. Mince the parsley
4. Add the veggies to the bowl,
5. Add mayo, salt and pepper.
6. Mix well
