Cheesecake Brownie AKA Happy 9 Years, Baby!

This past Wednesday, it was our first anniversary. Everyone seems to forget their anniversaries before they got married. Wedding anniversary is usually the anniversary that everyone celebrates. We try to do both!
Remember those days before you got married? When you were first dating, those fun days when it was just the two of you. Those were the days we “grew up” as a couple. We still make sure to have a small celebration for our first anniversary date. Nothing big, just to make sure we remember those pre-wedding days as well. 
As I said, Last Wednesday was our 9-year anniversary. We have been together for 9 years!! I know,  to a lot of the couples that might seem like nothing, but it just seems like such a long time passed in a blink of an eye. I guess it seems so long because I still can not believe how fast time flew by. It’s a good thing!! Time goes by when you are having fun, right?!
My hubby and I began dating when I was only 17-years old. When I left for college 6 months later, he moved with me. Everyone told us that we we crazy to move in together so soon and that our relationship won’t last. I have one thing to say to that….”9 years, and still very much love!!”

I wanted to make something that my hubby would love to celebrate our 9-years.  He loves cheesecake and lately has been asking for me to make something cheesecake related. I love brownies, he loves cheesecake so it was a perfect blend! 

A box of your favorite brownie mix
Items required to mix into the brownie mix

8 oz cream cheese, softened
1 egg
1 tsp vanilla
2 tbs nonfat plain yogurt
3 tsp sugar
1 tsp cornstarch

 whipped cream for topping

~Preheat the oven to 350 and grease a 12-cup muffin tin. (After making these, I would recommend using a cupcake wrappers, but its up to you)
1. Mix the brownie according to the package instructions.

2. Divide the brownie batter between 12 muffin cups. ONLY about 1/3 full!
3. Bake for about 5-7 minutes, (just until it starts to rise.)

4. Meanwhile, combine all the ingredients for the cheesecake part in a small mixing bowl. Beat until all well combined.
5. Take the brownies out of the oven and scoop the cheesecake mixture on top.

6. Bake for another 11-13 minutes.

7. Make sure to cool it to room temperature before taking out of the tin.

~Top it off with some whipped cream before serving. May be some chocolate drizzle if you are feeling especially sweet~

  3. Would love to make these but I am hesitant to print this recipe because it is not print friendly and would take so much ink to print the pictures… My printer ink is so darn expensive.
