Oladushki (zucchini cakes)

 I have not made these in about 13 years! Don’t you know that feeling when you remember the taste from your childhood and just want to try it once again! My grandma used to cook all kinds of wonderful things with the fruits and veggies she grew in her garden. Oh boy, she is such a wonderful cook. Thanks to her for teaching my mom and to my mom for teaching it to me!!
Anyway, I have been on the “tastes of childhood” kick. I’ve been trying to recreate all those wonderful dishes my grandma and mom used to make when I was a child. This is another one of those dishes.
Oladushki can be made with different veggies and even fruit. My favorite and the ones my grandma made the most, were made from zucchini. Yumm-yummy!
Alright….these have been tested on my husband, son and co-worker and all have been approved :):) So don’t be afraid to try it!!


(sorry about not taking a picture, it was early morning before work :)

2 medium zicchinis
2 eggs
1/2 tsp sugar
1/2 cup flour
1 tsp baking soda

1. In a large mixing bowl, shred the zucchini on a small grater.
2. Add the eggs, salt, sugar and mix well.

3. Add flour and baking soda and mix well. (don’t be afraid of the consistency, it will be runny)

4. Heat a skillet through with a little bit of oil on medium.
5. Spoon some of the batter into the skillet.

6. Cook for about 2-3 minutes on each side, depending on the size of the cake.
